Breakfast Smoothie (1 servings)
This is an excellent option for breakfast, as it’s so easy to throw together. The combination of fruit, linseeds and almonds will give you good energy through the morning. If you like, you can add 1⁄2 teaspoon psyllium husks or 11⁄2 teaspoons oat bran for extra soluble fibre.
Ingredients
250 ml (1 cup) rice milk or soy milk
1 small or 1⁄2 large ripe banana,
quartered
1⁄2 cup fresh or frozen blueberries
1–2 tbsp linseeds, freshly ground
1–2 tbsp almond meal
1 tsp honey, rice syrup or maple syrupPreparation Method
Place all the ingredients in a blender jug and blend until thick and smooth. Pour into a glass and drink immediately. Best to have it immediately after making as will thicken on standing.
