Squash Smoothie (2-3 servings)
The squash smoothie is make of lightly cooked butternut squash. Squash makes delicious, vitamin packed smoothie. It has a wonderful rich, rounded flavors, that is lifted perfectly by additional of citrus juice and warm, spicy cinamon.
Squash are not only delicious but they also contain high levels of magnesium and pottasium and are low in calories, if you can only buy large squash, cook it all and add the leftovers to stew or soup.
Squash Smoothie Ingredients
1 small butternut squash (about 600g)
1/2 tsp ground cinnamon
3 large lemons
1 grapefruit
clear honey to taste
ice cubes
Squash Smoothie Preparation Method
Halve the squash, scoop out the and discard the seeds and cut the flesh into chunks. Cut away the skin and discard. Steam or boil the squash for 10-15 minutes until just tender. Drain well and leave to stand until cool.
Put the cooled squash in a blender or food processor and add the ground cinnamon. Squeeze the lemons and grapefruit and pour the juice over the squash. Add honey if using.
Process the ingredients until they are smooth. If necessary, pause to scrape down the side of the food processor or blender.
Put a few ice cubes n two or three short glasses and pour over the squash smoothie and serve immediately.
