Tropical Almond Seed Spread (3 cups)

Excellent to have on with toast for breakfast or snacks. The nuts and seeds combined with crispbread or toast will provide a good protein source for vegetarians. And nuts and seeds are low GI (glycaemic index) that will help provide you with sustained energy. Use your favourite nuts in different combinations for variety. Other nuts suitable include brazil nuts, pistachios, pecans, cashews, hazelnuts, pinenuts and macadamias. 

Ingredients

400 g (21⁄2 cups) almond kernels
100 g (2⁄3 cup) pumpkin seed kernels
100 g (2⁄3 cup) sunflower seed kernels
55 g (1⁄3 cup) sesame seeds
light olive oil, canola oil or
macadamia oil
sea salt (optional) 

Preparation Method

Spread almonds on an oven tray and roast at 180°C for 8 minutes, stirring after 4 minutes, or until almond kernels are lightly browned. Remove from oven.

Spread pumpkin seed kernels, sunflower seeds and sesame seeds over another oven tray and roast for 5 minutes or until pumpkin seed kernels are lightly browned.

Cool. Process almonds and seeds in a food processor until finely ground. Add oil, a tablespoon at a time with the motor operating until a thick paste forms. Season with a pinch of sea salt, if using. Spread will keep in refrigerated air tight container for 2 months
