Blueberry Muffins (12 muffins)
Ingredients for Blueberry Muffins
11⁄4 cups rolled oats
11⁄4 cups whole-wheat flour
1 teaspoon baking powder
2 cups fresh or frozen (thawed) blueberries
1⁄4 cup canola oil
1⁄3 cup honey
3 tablespoons water
1 large egg or 1⁄4 cup egg substitute
1 teaspoon fresh lemon or lime rind (optional)*
2 tablespoons lemon or lime juice
*Wash the fruit before grating.
Preparation Method for Blueberry Muffins
Preheat the oven to 375°F. Spray a twelve-cup muffin tin with nonstick cooking spray or line the cups with paper liners. In a large mixing bowl, mix oats, flour, and baking powder. Make a well in the center. In a separate bowl, mix the remaining wet ingredients.
Pour the wet ingredients into the dry ingredients and stir until just blended; add the lemon or lime rind. Divide the batter evenly among the prepared muffin cups. Bake 18 minutes and you blueberry muffins is ready to serve.
