Cornbread Muffins (12 muffins)
Ingredients for Cornbread Muffins
1 cup yellow cornmeal
1 cup whole-wheat flour
1 teaspoon baking powder
1 15-ounce can (2 cups) cream-style corn
1⁄4 cup canola oil
1⁄3 cup honey
1 large egg or 1⁄4 cup egg substitute
1⁄4 cup unsulfured molasses
Preparation Method for Cornbread Muffins
To make cornbread muffins preheat oven to 375°F. Spray a twelve-cup muffin tin with nonstick cooking spray or line the cups with paper liners. In a large bowl, mix the cornmeal, flour, and baking powder. Make a well in the center. In a separate bowl, thoroughly mix the wet ingredients.
Pour the wet ingredients into the dry ingredients and stir until just blended. Divide the batter evenly among the prepared muffin cups. Bake eighteen minutes.
