Dates Porridge (4 servings)

Dates is full of fiber and nutrients, pureed fresh dates give a natural sweetness and eliminate the need to add sugar.  Additional fruits and nut topping makes your porridge tastier and more exciting.

Ingredients for Dates Porridge

2 cup fresh dates
2 cup rolled oates
2 cup non-dairy milk
pinch of salt
1/2 cup shelled, unsalted pistachio nuts, roughly chopped

Preparation Method for Dates Porridge

To prepare dates porridge, first make the date puree.  Halve the dates and remove the pits and stems.  Cover with boiling water and soak for 30 minutes, until soften.  Strain and retain 6 tbsp of the soaking water.

Remove the skin from the dates and puree them in a food processor with the retain soaking water.

Place the oats in a pan with the milk water and salt.  Bring to boil, then reduce the heat and simmer for 4-5 minutes until cooked, stirring frequently.

Serve the porridge in warm serving bowls, topped with a spoonful of the date puree and sprinkled with chopped pistachio nuts and the dates porridge is ready to serve.
