Orange Muffins (12 muffins)
Ingredients for Orange Muffins
1 cup rolled oats
1 cup whole-wheat flour
2 teaspoons baking powder
3⁄4 cup chopped pecans
1 medium seedless orange, washed
1⁄3 cup water
1⁄4 cup canola oil
1⁄3 cup honey
1 large egg or 1⁄4 cup egg substitute
3⁄4 cup chopped pecans
Preparation Method for Orange Muffins
To make orange muffins, first preheat the oven to 375°F. Spray a twelve-cup muffin tin with nonstick cooking spray or line the cups with paper liners. In a large bowl, mix the oats, flour, baking powder, and pecans. Make a well in the center and set the bowl aside.
Cut the orange into quarters and place it, peel and all, in a blender. Add the water and blend on high until smooth. Add the oil, honey, and egg to the blender and continue to blend until thoroughly mixed. Pour the wet ingredients into the dry ingredients and stir until just mixed. Stir in the pecans. Divide the batter evenly among the prepared muffin cups. Bake eighteen minutes and it is ready to served.
