Apple and Berry Crumble Recipe (4-6 servings)
This is a lovely crumble because the apples are lightly stewed to bring out their flavour. Use thawed frozen berries if fresh ones are not available. You can also make this in individual 1-cup ovenproof dishes.
Apple and Berry Crumble Ingredients
4 red apples, peeled, cored and
quartered
300 g berries (such as strawberries,
raspberries, blackberries or
blueberries)
1 tsp honey
light olive oil for greasing
TOPPING
125 g (11⁄3 cups) rolled oats
35 g (1⁄3 cup) rice bran
1⁄2 tsp ground cinnamon
1⁄2 tsp freshly grated or ground nutmeg
1⁄4 tsp allspice
1 tbsp macadamia or canola oil
2 tsp butter, melted
3 tsp honeyApple and Berry Crumble Preparation Method
To make filling, place apples in saucepan and add 180 ml (3⁄4 cup) water. Bring to a simmer and cook, covered, for 10 minutes or until just tender. Drain off the liquid and add berries and honey. Mix gently. Lightly brush a shallow 2-litre (8-cup) ovenproof dish with oil. Place apple mixture in dish. To make Topping, combine oats, rice bran, cinnamon, nutmeg and allspice in a bowl. Mix well. Combine oil, butter and honey, and pour over oat mixture. Use your fingers to rub the mixture together to evenly combine. Sprinkle mixture over apples. Bake at 180°C for 15 minutes or until topping is lightly browned. Serve warm or at room temperature.
