Baked Nectarines (4 servings)
Fresh nectarines stuffed with ground almond and chopped pistachio nut filling are baked in orange juice until tender and juicy, then served with a fragrant sauce made by stirring passion fruit seeds into the fruity cooking juice. Peach contain very high vitamin C and the nuts provide the protein and vitamin E.
Bake Nectarines Ingredients
50g/2oz/1/2 cup ground almonds
15 ml/ 1 tbsp caster (superfine) sugar
1 egg yolk
50g/2oz/1/2 cup unsalted shelled pistachio nuts chopped
4 nectarines
250 ml/8oz/scant 1 cup orange juice
2 ripe passion fruitsBaked Nectarines Preparation Method
Preheat the oven to 200 degree celcius / 400 degree F / Gas 6. Mix together the ground almonds, sugar and egg yolk in a bowl to make a paste, then stir in the pistachio nuts.
Cut the nectarines in half and remove the stones (pits). Place the nectarines and pistachio filling into the nectarine halves, packing plenty of filling, and then place them in a single layer in the base of a shallow ovenproof dish.
Pour the orange juice around the nectarines, then cover the dish with a lid or foil and place in the preheated oven. Cook for 15 minutes.
Remove the lid and bake for further 5-10 minutes or until nectarines is soft, transfer it to the individual serving plates.
Cut the passion fruits in half, scoop out the seeds and stir them into the cooking juices in the dish. Place the nectarines on serving plates and spoon the sauce over and around them. Serve immediately.
