Chocolate Cake with Raspberry Sauce Recipe (4 servings)

 

  Chocolate Cake Ingredients

 Cake
11⁄2 cups semisweet dark chocolate chips
1 19-ounce can (2 cups) cooked chickpeas, drained and rinsed*
4 eggs or 1 cup egg substitute
1⁄2 cup sugar
1⁄2 teaspoon baking powder
1 tablespoon powdered sugar
 

Raspberry Sauce
1⁄2 cup seedless raspberry jam
2 teaspoons fresh lemon juice
1 pint fresh raspberries
*Using legumes instead of flour adds fiber and protein and reduces unhealthful
spikes in blood sugar.

  Chocolate Cake Preparation Method

 TO MAKE THE CAKE

Preheat oven to 350°F. In small bowl, melt chocolate chips in the microwave two minutes on medium power. In a blender or food processor, combine the beans, eggs, sugar, baking powder, and the melted chocolate, and process until smooth. Pour the batter into nonstick nine-inch round cake pan. Bake forty-five minutes or until a knife inserted in the center comes out clean. Cool thoroughly. Sprinkle with powdered sugar.

TO MAKE THE RASPBERRY SAUCE

In a small bowl, microwave jam until it is completely melted, about one minute. Stir in the lemon juice and berries. Serve over cake wedges.
