Exotic Fruit with Ginger (4 servings)
Pineapple, papaya, melon and pomegranates offer and impressive range of detoxifying qualities and is suitable for breakfast or as dessert. You can substitute the ginger with some low fat probiotic yogurt.
Exotic Fruit Platter with Ginger Ingredients
1 pineapple
2 papaya
1 melon
juice of 2 limes
2 pomegranate
ground ginger to taste, to taste

Peel the pineapple. Remove the core then cut the flesh lengthways into thin wedges. Peel the papayas, cut them in half, remove the seeds, then slice into wedges.
Halve the melon and remove the seeds from the middle. Cut into thin wedges and remove the skin.
Arrange the fruit on six individual plates and sprinkle with lime juice. Cut the pomegranate in half and scoop out the seeds, scatter the seeds over the fruits. Seve with little ginger to taste and a few sprigs of mint.
