Fruit with Mango Coulis (4 servings)
A flavor fruit sauce, or coulis, is easy to prepare and ideal to transform simple fruit salad into something special. Mangos make luscious coulis, but other soft fruits, such as raspberries, strawberries or peaches, would make good alternatives.
Fruit with Mango Coulis Ingredients
1 large ripe mango, peeled, stoned and chopped
rind of 1 orange
juice of 3 oranges
caster (superfine) sugar to taste
2 peaches
2 nectarines
1 small mango peeled
2 plums
1 pear or 1/2 small melon
juice of 1 lemon
50 g/2oz / 2heaped tbsp wild strawberries
50 g/2oz/2 heaped tbsp raspberries
50 g/2oz/2 heaped tbsp blueberries
small fresh mint sprigs to decorateFruit with Mango Coulis Preparation Method
In a foods processor blend the chopped flesh of the mango until smooth. Add orange rind and juice and a little sugar to taste and process again until very smooth. Press through a sieve (strainer) into a bowl and chill.
Slice and stone the peaches, nectarines the pear and remove the core or if using, slice the melon thinly and remove the skin.
Place the slice fruits on a large plate, sprinkle with lemon juice and chill, cover with clear film for up to 3 hours. (Note : Some fruit will discolor if cut too far ahead of time).
To serve arrange the slice fruits on a serving plates, spoon the berries on top, drizzle with a little mango coulis and decorate with mint sprigs. Serve the remaining coulis seperately.
