Papaya with Mint Sauce (4 servings)

Papaya with Mint Sauce Ingredients
2 large papayas
225 g/ 2cups seedless green grapes
juice of 3 limes
2.5 ml/ 1in fresh root ginger, peeled and finely grated
15 ml / 1 tbsp clear honey
5 fresh mint leaves, cut into thin strips, plus extra whole leaves to decoratePapaya with Mint Sauce Preparation Method
Peel the papayas and cut into small cubes, discarding the seeds. Cut the grapes into half.
In a large mixing bowl, thoroughly combine the lime juice, ginger, honey and shredded mint leaves.
Add papaya and grapes to the bowl and toss together gently. Cover with clear film and leave in a cool place to allow the flavors to mingle for 1 hour.
Serve in a large glass dish or individual stemmed glasses, decorated with whole fresh mint leaves.
