  Poached Pears (4 servings)

 Pears are among the least allergenic of foods and they contain vitamin C and provide a useful amount of potassium, essential for helping to regulate the blood pressure.  Delicate and pretty to look at, these scented pears, poached in a honey and lemon syrup with saffron, cinnamon and lavender, would provide and exquisite finishing touch to a detox meal.

 Poached Pears Ingredients

 45 ml/ 3tbsp clear honey
juice of 1 lemon
250ml / 8fl oz / 1 cup water
pinch of saffron threads
1 cinnamon stick
2-3 dried lavender heads
4 firm peas

  Poached Pears Preparation Method

Heat the honey and lemon juice in a heavy pan that will hold the pears snugly.  Stir over a gently heat until the honey has dissolved.  Add the water saffron threads, cinnamon stick and flower from 1-2 lavender heads.  Bring the mixture to the boil then reduce the heat and simmer for 5 minutes.

 Peel the pears, leaving the stalks attached.  Add the pears to the pan and simmer for 20 minutes, turning and basting at regular intervals until they are tender.  Allow to cool, then serve at room temperature and decorate with a few lavender flowers.
