  Strawberry with Passion Fruit Sauce(4 servings)

  Strawberry are rich in antioxidants, including beta-carotene and vitamin C which help to neutralize harmful free radicals in the body.  Berry fruits taste best when they are serve at room temperature, so remove strawberry from refrigerator one hour before serving.

 Strawberry with Passion Fruit Ingredients

 700 g / 6 cups small strawberries
350 g/ 2 cups raspberries fresh or frozen
1 passion fruit
30ml / 2 tbsp clear honey

 Strawberry and Passion Fruit Preparation Method

 Place the raspberries and honey in a pan and warm over very gentle heat to release the juices.  When the juices start to run, simmer for 5 minutes stirring occasionally.  Set aside and allow the mixture to cool.

Halve the passion fruit and using a teaspoon carefully scoop out the seeds and juices into a small bowl.  Put the raspberries into a food processor, add the passion fruit and blend until smooth.

Place the raspberry and passion fruit sauce in a fine nylon sieves and press the puree through to remove the seeds

Divides the strawberries among the serving bowl, spoon over some sauce and serve.  Offer extra sauce separately in a small jug.
