  Chicken with Herb Couscous (4 servings)

 

 Chicken with Herb Couscous Ingredients

 2 tablespoons extra-virgin olive oil
1 cup sliced leeks
3 cloves garlic, minced
1 cup quartered Brussels sprouts
2 cups peeled, bite-size cubes of butternut squash
1 pound skinless, boneless chicken breasts, cut into bite-size chunks
11⁄2 cups fat-free chicken broth, divided
Salt to taste
Freshly ground black pepper to taste
1 cup whole-wheat couscous
2–4 tablespoons minced herb blend of fresh sage, thyme, and marjoram
1⁄4 cup minced parsley

 Chicken with Herb Couscous Preparation Method

 In a large pan heat olive oil and sauté leeks, garlic, Brussels sprouts, and butternut squash for five minutes. Add chicken and 1⁄4 cup of the broth. Season with salt and pepper. Cover and simmer five to ten minutes or until chicken is cooked and vegetables are tender.

Stir in the couscous. Add remaining chicken broth and the herb blend. Cover and simmer five more minutes or until liquid is absorbed. Adjust the seasonings to taste. Stir in parsley.
