Pan Fried Chicken with Pesto(4 servings)
Pan fried chicken with warm basil pesto make a deliciously quick main dish. Omit the Parmesan cheese for a dairy free pesto. Walnuts is a good alternative to pine nuts.
Pan Fried Chicken with Pesto Ingredients
15 ml/ 1 tbsp olive oil
4 skinless, chicken breast fillet
fresh basil leaves to garnish
For Pesto
90ml/6tbsp olive oil
50g/1/2 cup pine nuts
50g/ 1/2 cup freshly grated Parmesan cheese
50g/ 1 cup fresh basil leaves
15 g / 1/4 cup fresh parsley
2 garlic cloves, crushed

Heat the 15 ml / 1tbsp oil in a frying pan. Add the chicken breast and cook gently for 15-20 minutes, turning several times until the chicken breast is tender, lightly browned and thoroughly cooked.
Meanwhile, make the pesto. Place the olive oil, pine nuts, Parmesan cheese, basil leaves, parsley, garlic and pepper in a blender and process until smooth.
Remove the chicken from the pan, cover and keep hot. Reduce the heat slightly, then add the pesto to the pan and cook gently, stirring constantly for a few minutes until the pesto has warmed through
Pour the warm pesto over the chicken, garnish with basil leaves and serve immediately.
