  Roast Chicken and Thyme in Parchment (4 servings)

 

 Roast Chicken Ingredients

 1 tablespoon minced garlic
1⁄2 cup Bragg Liquid Aminos
Juice of 2 lemons
3 tablespoons minced fresh thyme
2 chicken breasts, skinned, split, washed, and patted dry
4 pieces of 15-inch-long parchment paper
1 leek, chopped
1 large clove of elephant garlic, sliced, or 2 shallots, sliced

 Roast Chicken Preparation Method

 Preheat the oven to 350°F. In a suribachi (or using a mortar and pestle), press the minced garlic into a small amount of the Bragg Aminos. Add the remainder of the Bragg Aminos as well as lemon juice, continuing to grind and press the garlic into the liquids. Add one tablespoon of the minced thyme and mix well. Place chicken breasts in a Pyrex dish. Cover with the garlic-Bragg-lemon mixture and marinate for about one hour, turning the meat over occasionally.

Place each split chicken breast in the center of a piece of parchment paper and add the leek and sliced garlic or shallots. Bring short sides of paper together over the chicken and secure, through a combination of rolling and folding. Close the other ends in the same way. Proficiency will improve with practice. Make sure to leave a space between the parchment and the top of the meat. Bake approximately twenty minutes.
