Asparagus Salad (4 servings)

 Asparagus salad is combine tender spears of asparagus, juice orange, ripe tomatoes which all provide valuable amounts of vitamin C, and asparagus is also well known diuretic and can help to relieve fluid retention.  It is also a mild laxative and may help relieve indigestion.

Cooking tips: The bottom of asparagus stalk is usually hard and woody, so it well probably need to be cut off with a sharp knife.  However if you are using short slender stems, or "spruce", then trimming may not be necessary.

 Asparagus Salad Ingredients

 225g/8oz asparagus, trimmed and cut into 5cm/2in lengths
2 large onions
2 tomatoes, cut into eights
50g / 2 oz cos or romaine lettuce leaves
30 ml/ 2 tbsp extra-virgin olive oil
2.5 ml/1/2 tsp sherry vinegar or balsamic vinegar
ground black pepper

Asparagus Salad Preparation Method

 Cook asparagus in boiling, lightly salted water for 3-4 minutes, until just tender.  The cooking time may vary according to the size of the asparagus stems. Drain and refresh under cold water, then leave on one side to cool.

Finely grated the rind of half an orange and reserve.  Peel both the orange and cut into segments.  Squeeze the juice from the membrane and reserve.

Put the asparagus, orange segments, tomatoes and lettuce into a salad bowl.

Mix together the oil and vinegar and add 15ml/1 tbsp of the reserved orange juice and 5 ml / 1 tsp of the grated rind.  Season with salt and pepper.  Just before serving pour the dressing over the asparagus salad and mix gently to coat all the ingredients.
