Avocado Salad (4 servings)

 

 Avocado Salad Ingredients

 2 large ripe avocados
3 chicory (Belgian endive) heads, leaves separated, washed and dried
50 g/20x rocket, washed and dried
juice of 1/2 lemon
90 g / 1 cup walnuts halves
sea salt and ground pepper to taste

 

Dressing

15 g / 1/2 cup fresh dill stalks removed
1 garlic clove, crushed
juice of 1 lemon
5 ml/ 1tsp clear honey
5 ml / 1 tsp soy sauce
350g/12 oz silken tofu
5ml / 1 tsp French mustard
50ml / 1/4 cup olive oil

Avocado Salad Preparation Method

 Start making the avocado salad by tossing the chicory and rocket leaves together a large bowl then heap on the to four individual serving plates

Peel, stone (pit) and slice the avocados, then toss in the lemon juice to prevent the slices from discoloring.  Divide the avocados evenly among the serving plate.

Sprinkle over the walnuts and season lightly with pepper.

Make the dressing by blending all the ingredients except the oil in the a food processor.  With the machine running gradually add the oil.

Season to taste.  Drizzle the dressing over the avocado salad and serve immediately.
