Carrot Salad (4 servings)
This fresh and zesty carrot salad is ideal served as and accompaniment to grilled chicken and fish. Root ginger goes well with sweet carrots, and the tiny black poppy seeds not only add taste and texture but also make the salad look stunning
Carrot Salad Ingredients
350g/12 oz carrots, peel and cut into fine matchsticks
30 ml /2 tbsp garlic infuse olive oil
2.5 cm / 1 in piece of fresh root ginger, peeled and grated
15 ml/ 1tbsp poppy seeds
ground black pepperCarrot Salad Preparation Method
Put carrot in a bowl and stir in oil and grated ginger. Cover with clear film (plastic wrap) and chill for at least 30 minutes, to allow flavors to develop.
Season the salad with pepper to taste. Sprinkle the poppy seeds over the salad just before serving. The black seeds make stunning contrast against the carrots orange color plus it add a pleasing crunch to the carrot salad.
