Chili and Pea Salad (4 servings)
Chili and Pea Salad Ingredients
1 hot chili pepper, stemmed, seeded, and minced
3 cups shelled peas or 1 package frozen peas
2 teaspoons chopped fresh parsley
11⁄2 tablespoons chopped fresh cilantro + extra for garnish
3 tablespoons chopped fresh mint
3 scallions (green part only), sliced thin
1⁄2 teaspoon sea salt
1 teaspoon canola oil
1 pound skinless turkey breast, sliced into four pieces
2 cups mixed butter lettuce and arugula, cleaned

Blanch the peas in boiling salted water for one minute. Drain and rinse under cold running water. If using frozen peas, cook according to instructions, but don’t overcook. Toss the peas with parsley, cilantro, mint, chili, and scallions. Salt lightly. Set aside.
Heat oil in a heavy iron skillet. Salt the turkey slices and sauté until done, about 11⁄2 to 2 minutes on each side, depending on the thickness. On each of four plates, arrange arugula and lettuce. Add the pea mixture on top of lettuce and arugula. Place a piece of turkey on each serving and top with a generous squeeze of lime juice. Garnish with fresh chopped cilantro.
