Citrus Salad (4 servings)

  This citrus salad is a refreshing and tangy combination - rocket and lamb's lettuce leaves are topped with fresh grapefruit, orange, avocado in a light, fruity dressing.  Toasted pine nuts add a crunchy contrast and provide protein.

 Citrus Salad Ingredients

1 pink grapefruit
2 large oranges
1 large avocado
50 g/1/2 cup pine nuts
25 ml/ 1 1/2 tbsp olive oil
10 ml / 2 tsp cider vineger
30 ml / 2 tbsp freshly squeezed orange juice
50 g/2 oz lamb's lettuce
50 g/ 20 oz rocket (arugala)
ground black pepper
15 gram / 1/2 oz fresh chives
fresh herb sprigs, to garnish

Citrus Salad Preparation Method

Start making the citrus salad by halving and segmenting the grapefruit and oranges and place the segments in a mixing bowl.  Prepare a bowl to catch the juices

Peel, stone (pit) and slice the avocado and add slices to the bowl.  Gently stir in the pine nuts, taking care not to break up the avocado.

Whisk together the olive oil, vinegar, orange juice and pepper in a small bowl or jug and stir into the fruit mixture.

Arrange the lamb's lettuce and rocket on four serving plates and divide the fruit and dressing evenly over each.  Garnish with chives and herbs sprigs and serve the citrus salad immediately.
