Greek Salad (4 servings)

 Greek salad is a popular Mediterranean salad, that typifies the healthy diet found in the region.  Traditionally it includes feta cheese, which add protein and calcium to the salad.  For a dairy-free version while following a strict detox, or the who are lactose intolerant, substitute with a soya cheese instead.

 Greek Salad Ingredients

1 small romaine lettuce, sliced
450g/1lb well-flavored tomatoes, cut into eights
1 cucumber seeded and chopped
200g/7oz feta cheese crumbled
4 spring onion (scallions), sliced
50 g/2 oz/1/2 cup black olives, pitted and halved
salt and pepper to taste

Dressing
45 ml/ 3tbsp olive oil
25 ml/ 1 1/2 tbsp lemon juice
ground black pepper

Greek Salad Preparation Method

Put the lettuce, tomatoes, cucumber, crumbled feta cheese, spring onions and olive in a large salad bowl.

For the dressing, whisk together the olive oil and lemon juice, then season with salt and pepper.  Pour over the salad toss well and serve immediately.
