Lightly Blanched Salad (1 servings)
When boiling vegetables lightly, or blanching as it is called, add the vegetables that need the most cooking first. For example, when preparing the Lightly Blanched Salad, you would add carrots to the pot before the collard greens.
Lightly Blanched Salad Ingredients
Asparagus
Brussels sprouts
Carrots
Cauliflower
Collard greens
Green peas
Leeks
Onions
Summer squash
Juice from lemon to taste
Soy sauce to taste
Flaxseed or olive oil to tasteLigthly Blanched Salad Preparation Method
Place several inches of water and a pinch of salt in a pot and bring to a boil. Drop in the vegetable(s) requiring the longest cooking time.
A minute or two later add the rest of the vegetables. Remove the vegetables quickly and place into a strainer. Season with lemon, soy sauce, and oil and serve.
