Potato Salad (4 servings)

  Potato provide a good and steady release of energy.  They are high in fiber and very nutritious especially when freshly harvested and if eaten with skin as in this potato salad.  The caraway seeds and parsley add a wonderful flavour and help to stimulate digestion.

 Potato Salad Ingredients

 675g / 1 1/2 lbs new potatoes, scrubbed
15 ml / 1 tbsp caraway seeds, lightly crushed
45 ml / 3 tbsp chopped fresh parsley
45 ml / 3 tbsp garlic infused olive oil
ground black pepper

Potato Salad Preparation Method

Cook the potato in salted, boiling water for about 10 minutes, or until they are just tender.

Put the potatoes in a colander and drain, then transfer to a large bowl.

Stir the garlic-infused oil, caraway seeds and some pepper into the hot potatoes, set aside to cool, then stir in parsley and serve the potato salad immediately.
