Seafood Salad (4 servings)
This seafood salad is quick and easy to prepare and makes a great light meal. Shellfish is rich in vitamins and minerals and good source of omega-3 fatty acids
Seafood Salad Ingredients
400g/14 oz frozen seafood miz thawed and drained
30 ml of olive oil
15 ml / 1 tbsp flavor oil, such as basil or chilli oil
freshly grated rind of 1 lemon
15 ml/ 1tbsp lemon juice
1 garlic clove, crushed
30 ml/ 2tbsp chopped fresh basil
175 g/ 6oz mixed salad leaves
225g/ 8 oz sugar snap peas, slice diagonally
ground black pepper to taste.Seafood Salad Preparation Method
Place 15 ml/1 tbsp of olive oil, the flavored oil, grated lemon rind, lemon juice, garlic, basil in a small bowl. Seasoned with pepper and whisk together. Set aside.
Place the salad leaves and sugar snap peas inn a serving bowl and toss lightly to mix.
Heat the remaining olive oil in a large frying pan, add seafood and stir fry over medium heat for about 5 minutes until cooked.
Scatter the seafood over the salad leaves, drizzle the dressing over the salad, toss together gently to combine and serve the seafood salad immediately.
