Southwest Salad (4 servings)

 

 Southwest Salad Ingredients

 2 15-ounce cans soybeans, drained*
1 cup frozen yellow corn, cooked and drained
2 plum tomatoes, seeded and diced
1 small red pepper, diced
1⁄2 cup minced red onion
2 tablespoons minced cilantro
2 teaspoons minced parsley
2 tablespoons extra-virgin olive oil
1 tablespoon red wine vinegar
2–3 teaspoons fresh lemon juice
2 garlic cloves, minced
1⁄8 teaspoon cayenne pepper
Salt to taste
Freshly ground black pepper to taste
Romaine lettuce leaves, for garnish
*Most health-food stores have canned soybeans. Other beans may be substituted if
soybeans are not available.

Southwest Salad Preparation Method

 In a large salad bowl, combine the soybeans, corn, tomatoes, red pepper, onion, cilantro, and parsley. In a separate bowl, whisk together oil, vinegar, lemon juice, garlic, cayenne pepper, salt, and black pepper.

Pour the mixture over the salad. Cover and refrigerate at least one hour. Serve southwest salad over romaine lettuce leaves.
