Watercress Salad Ingredients
1 bunch watercress, chopped
3⁄4 cup chopped butter lettuce
1⁄2 cucumber, peeled, quartered, and sliced thin
5 radishes, sliced thin
1⁄2 carrot, shreddedVinaigrette
3 tablespoons flaxseed oil
1 tablespoon lemon juice
1⁄2 cup filtered water
3 tablespoons rice vinegar
3 tablespoons tamari
2 tablespoons mirin
Watercress Salad Preparation Method
Toss the vegetables together in a bowl. Whisk vinaigrette ingredients and drizzle over the salad. Lightly toss the ingredients. Let stand for thirty minutes and serve.
